Incumbent has complete administrative responsibility for food service operations in a small state institution. Work includes supervision and training of employees engaged i! n regular and modified diet preparation and services.
Difficulty of Work
Guidelines are not always clearly applicable and judgment must be exercised in dealing with unpredictable or unusual situations. The work is broad in scope and involves organization and decision making in all sections of a food service department.
Responsibility
Incumbent receives general instructions and supervision from food service director while exercising judgment in applying rules and guidelines. Unusual problems or deviation from guidelines are discussed with supervisor who otherwise reviews work periodically for accomplishment of objectives. Judgment and adaptive thinking must be utilized in the development and supervision of programs.
Personal Work Relationships
Incumbent works with patients, physicians and other medical staff, institutional department heads, outside agency officials, labor representatives, commercial vendors, general public and community! members (family care).
Develops and implements a nut! ritional plan based on an assessment of nutritional needs. This plan is included in the patientâs plan of care.
- Evaluates and reports results of nutrition appropriately.
- Instructs home care personnel to:
- A. Provide appropriate counseling to individuals and families/caregivers in the home setting.
- B. Evaluate and instruct on nutritional principles, dietary plans, food selec¬tion and economics.
- C. Adapt plans to the individual's life style, as indicated.
- D. Reevaluate nutritional care by providing home follow-up care.
- Communicates appropriate dietary history and nutritional care data in the clinical record.
- Records subjective and objective information, assessment, and treatment plan, in the clinical notes including a discharge summary.
- Maintains the productivity standards of MHHR
- Completes and submits clinical documentation according to MHHR standards
- Communicates with cl! inician regarding patientâs progress and treatment goals.
- Maintains confidentiality and safety of patient clinical records.
- Complies with the Organization's policies and procedures.
- May perform other duties as required, assigned or deemed necessary by Maxim and/or the facility/client/supervisor.
- Directs the total food service operation in the absence of the director;
- Plans menus and instructs dietitians, dietetic technicians, supervisors and others in preparation of regular and modified diets;
- Specifies and requisitions food, materials, supplies and equipment;
- Supervises the sanitation program and sanitation inspection of the food service department;
- Supervises the modified diet program including preparation and service of diets, calculation and writing of diets and diet menus. Confers with physicians regarding individual diet needs and general ward f! ood service;
- Performs nutritional analysis of menus to ensure ! conformance with standards;
- Provides diet instruction, records in patient charts and inter-acts with ¬treatment teams relative to individual treatment programs;
- Prepares and conducts dietary training programs, both in service and as may be required, in other hospital disciplines and in community services;
- Confers with director on operational and personnel problems;
- Assists in budgeting food, supplies, equipment and facility modification and design;
- Coordinates food service with treatment program;
- Performs other duties as required.
- One (1) year full-time professional experience as a Registered Dietitian.
- Specialized knowledge of the principles, techniques and terminology of modern dietetics, institutional management and personnel administration;
- Working knowledge of modern methods, materials and equipment used in large-scale food service and the care necessary to! maintain equipment, physical facilities and properly utilize resources;
- Ability to plan menus and direct quantity food preparation and service;
- Ability to judge food quality, determine conformity to standards and necessitate corrections where necessary;
- Ability to prepare modified diet menus and instruct cooks in the preparation and service of modified diets;
- Ability to prepare and conduct in service training, hospital inter discipline training and training for required community services;
- Ability to work with people, inter departmental and intra departmental, medical and administrative personnel and the community sector.
